So extra slices were cut and brought to our neighbors house for a second taste test. I explained the cake was low glycemic and since our neighbor is a nurse, my request for her was to taste and let me know if the cake was sweet enough. the next day, there was a knock at our door and it was the neighbor who came with a report of her taste test. She liked the cake but preferred another flavor of yogurt. Her husband saw me a few days later and told me that he enjoyed the cake. The taste test is now up to you. Top the cake with a flavor of yogurt that you like or use low glycemic frosting as desired. Now the verdict of the blueberry chia cake, simply delicious.
